As I get to know more bloggers in the DOC, I keep finding interesting diabetes support and related events. The most recent one I participated in is the Diabetic Ice Cream Social. It was a celebration of moderation, understanding, support and choices. Instead of ice cream, however, I had corn because I went to a fireworks display with friends, and the dear friend who organized the excursion brought corn. One of the things I love about summer is sweet corn. Fresh corn on the cob brings back wonderful memories of childhood summer. My friend’s corn on the cob, cooked with butter and light soy sauce, is the best.
Unfortunately, the photo does not do justice to how delicious it was. It was thoroughly worth my slightly higher-than-normal BG, and a long run earlier in the day (I can eat more carbs after running, so I ran longer than I initially planned to accommodate the additional carbs from corn).
After enjoying my corn on the cob, I thoroughly enjoyed the fireworks display.
August 3, Saturday, was a good day.
Postscript: Today, August 4, while it was still August 3 in the US (specifically, Hawaii), I had ice cream laced with Cointreau. So, I did get to enjoy some ice cream. (Thanks, Michael Hoskins for the suggestion.)
